Caviar Blinis with Crème Fraîche: 12-Piece Assembly

Caviar Blinis with Crème Fraîche: 12-Piece Assembly

By Beleaev Family | Beleaev Caviar & Gourmet

These caviar blinis use one ready-made 12-piece pack, 30g of caviar and 60g of crème fraîche to make 12 canapés. That gives four guests three blinis each, with 2.5g of caviar and 5g of crème fraîche on every piece. Warm the blinis, let the surface heat settle, then add the chilled toppings immediately before serving.

  • Yield: 12 topped blinis
  • Serving role: three canapés each for four guests
  • Caviar allocation: 2.5g per blini

Ingredients and packs to purchase

Use ready-made Beleaev Blinis - 12 pc. For homemade buckwheat blinis, use a separate batter recipe.

Ingredient Amount used Purchase amount
Beleaev Blinis 12 pieces 1 pack of 12
Crème fraîche 60g 1 x 170g pot
Royal Baeri Caviar 30g 1 x 30g tin
Fresh chives, optional 2g finely cut 1 small bunch

The recipe uses all 30g of caviar but only part of the 170g crème fraîche pot. Keep any unused crème fraîche according to the current label and use-by date. Do not infer a storage period from this recipe.

Equipment

  • Large dry frying pan or baking tray
  • Palette knife or tongs
  • Digital kitchen scale resolving to at least 0.1g
  • Small bowl for the measured crème fraîche
  • Two teaspoons or a piping bag for portioning the cream
  • Non-metal caviar spoon
  • Cold serving plate

Method

  1. Set up the cold ingredients. Keep the sealed Royal Baeri Caviar chilled while you arrange the equipment. Weigh 60g of Crème Fraiche, Fresh, 170g into a small bowl and return it to the fridge until assembly.
  2. Warm the blinis gently. Follow the current pack instructions for Beleaev Blinis - 12 pc. If the delivered pack directs a dry-pan method, warm them for the time stated on that pack. Work in batches if they overlap.
  3. Let the surface heat settle. Move the blinis to a plate in one layer. Add the chilled toppings only when the bases are warm rather than hot, following the current product directions.
  4. Portion the crème fraîche. Place 5g in the centre of each blini. Keep a small border visible so the topping does not slide over the edge. Twelve equal portions use the measured 60g.
  5. Add the caviar last. Open the caviar only when all 12 bases are ready. Divide the 30g tin evenly, placing 2.5g on each blini with a non-metal spoon. Lift the pearls onto the cream rather than pressing or spreading them.
  6. Finish and serve. Add a few pieces of chive if using. Serve the full plate straight away so the bases remain warm and the caviar stays cool.

How to keep the topping even

Weighing the two main toppings gives every guest the same allocation. Start with 60g of crème fraîche and divide it into 12 portions of 5g. Then divide the 30g caviar tin into 12 portions of 2.5g using a scale that resolves to at least 0.1g. If that scale is unavailable, weigh 5g across each pair of blinis and divide the pair visually.

Do not use a heaped household teaspoon as a weight measure. Spoon shapes differ, and the same spoonful can contain quite different amounts. The scale also makes it clear that the 170g crème fraîche pot is a purchased pack, not the amount consumed in this recipe.

Allergens and storage

This recipe contains fish, milk, egg and wheat, including gluten. The published blini ingredient information also says the product may contain traces of soya. Check every current pack label before serving because recipes and cross-contamination statements can change.

Keep the caviar and crème fraîche chilled according to their exact labels. The published blini instructions say to keep the pack refrigerated below 5°C, or frozen at -18°C when supplied frozen, and not to refreeze it after thawing. The current delivered label takes precedence.

Once the caviar is opened and the blinis are topped, serve them immediately. This recipe does not establish a safe storage period for leftover assembled canapés.

Serving note

The point of this version is consistency: a warm, neutral base, a measured layer of cool crème fraîche and 2.5g of Royal Baeri Caviar on every piece. Keep the garnish restrained if you want the caviar's published gentle sweetness and light almond description to remain the focus.

For a larger table, repeat the 12-piece batch rather than leaving topped blinis to wait. One batch provides three canapés each for four guests. If blinis are one part of a wider spread, adjust the number of pieces per guest before calculating the number of packs.

Homemade buckwheat route

For yeast-raised homemade bases, use the buckwheat blini recipe. Its batter and topping plan are separate from this ready-made twelve-piece version. Buckwheat flavour is an option, not a requirement for every blini served with caviar; the complete ingredients decide whether a recipe contains gluten.

Ready-made versus homemade: a separate comparison plate

The following alternative uses 20g Oscietra across sixteen pieces. Do not add its shopping quantities to the twelve-piece, 30g Baeri plan above unless you intend to make both platters.

For a separate sixteen-piece platter, compare eight ready-made blinis with eight homemade rounds on one measured plate. All 16 receive 5g crème fraîche and 1.25g Oscietra, so the base changes while the cold toppings remain equal.

  • Yield: 16 canapés, 8 of each base
  • Caviar: 1.25g per blini
  • Crème fraîche: 5g per blini

Ingredients and packs

Ingredient Recipe amount Pack to purchase
Oscietra Royal Caviar 20g 1 x 20g Sampling tin
Beleaev Blinis - 12 pc 8 pieces 1 x 12-piece pack
Crème Fraiche, Fresh, 170g 80g 1 x 170g pack
Plain flour 70g 1 bag
Whole milk 90ml 1 small bottle
Egg 1 medium 1 box
Baking powder 2g 1 pot
Fine salt 1g From the cupboard
Neutral oil 10ml 1 bottle

Equipment

  • Digital scale, measuring jug and two bowls
  • Whisk, non-stick frying pan and flat spatula
  • Cooling rack and 0.1g topping scale
  • Two labelled trays and non-metal caviar spoon

Cook and compare sixteen blinis

  1. Mix the homemade batter. Whisk the flour, baking powder and salt. Beat the egg with 90ml milk, combine with the dry ingredients and stop once no dry pockets remain.
  2. Match the base size. Use small, consistent spoonfuls to cook homemade rounds close to the packaged blinis' diameter. Cook the complete batter and select eight matching intact bases; keep any extras plain.
  3. Cook the homemade rounds. Brush the pan with the measured oil. Cook each portion until bubbles appear, the upper surface loses its wet sheen and the centre is cooked through. Move finished rounds to the rack.
  4. Prepare eight ready-made pieces. Follow their current pack directions and place them on a second rack. Let both groups settle before cold topping.
  5. Add identical toppings. Place 5g crème fraîche and 1.25g Oscietra on every blini.
  6. Pair the service. Serve four guests two of each base, or eight guests one of each base. Alternatively, arrange all 16 in alternating rows with clear labels.

Compare like with like

Match the homemade diameter to the ready-made pieces and keep topping weights fixed. The batter is a preparation batch, not a promise of exactly eight bases. The topping plan uses eight cooked bases from each group.

Blini corrections

  • The homemade rounds spread too far: use smaller consistent spoonfuls and leave enough room in the pan.
  • The centre stays wet: reduce the pan heat and wait for the upper surface cue before turning.
  • The ready-made group is hotter: allow both groups the same cooling interval before dairy is added.
  • The caviar allocation drifts: divide the 20g tin evenly across all sixteen bases when they are ready.

Allergens and storage boundary

Fish, milk, egg and wheat, including gluten, are present. The ready-made blinis may declare additional allergens or cross-contact. Check every exact pack. Keep caviar and crème fraîche chilled until the bases are ready, serve assembled blinis promptly and follow the individual labels for the four unused ready-made blinis and remaining dairy.
