What Makes a Caviar Farm Truly Sustainable?

We work exclusively with trusted aquaculture farms that prioritise clean water systems, ethical farming standards, full traceability, and long-term environmental responsibility.
Not all caviar farms operate to the same standard and “farmed” does not automatically mean sustainable.
When sourcing for Beleaev, we look far beyond the label.
Water Management
Sturgeon require exceptionally clean, cold, oxygen-rich water to thrive. The most advanced farms use recirculating aquaculture systems (RAS), which filter and recycle up to 95% of water used during production.
Compared to traditional open-flow systems, RAS farming dramatically reduces environmental impact while allowing much greater control over water quality and fish health.
Sustainable Feed & Responsible Farming
Feed sourcing plays a major role in sustainable aquaculture. Leading farms are reducing their dependence on wild-caught forage fish by introducing higher plant-protein ratios and insect-based alternatives into sturgeon feed.
The goal is simple: produce exceptional caviar while reducing pressure on marine ecosystems.
We also prioritise farms with lower stocking densities, strong welfare standards, and transparent farming practices.
Renewable Energy & CO2 Reduction
Modern caviar farming is energy-intensive. Water filtration, oxygenation, and temperature control operate continuously to maintain ideal conditions for sturgeon.
That is why energy sourcing matters.
At Beleaev, we actively prioritise farms investing in renewable energy and lower-emission infrastructure to help minimise the carbon footprint of caviar production. Many of the most progressive farms in France, Germany, and Italy are now leading the industry in sustainable aquaculture innovation.
Fish Welfare & No-Kill Caviar
At Beleaev, we only work with farms that meet our strict sustainability and fish welfare standards - including producers using no-kill harvesting methods wherever possible.
Traditional caviar production involves harvesting roe by euthanising the sturgeon, but modern aquaculture has evolved. Today, our partner farms use “no-kill” (c-section) techniques, where eggs are carefully extracted while the fish is under anaesthesia, allowing it to recover and continue its lifecycle.
This approach reflects our core philosophy: exceptional caviar should come from sustainable systems that respect both the environment and the life of the sturgeon.
Why CITES Certification Matters
Every legally traded tin of caviar carries a CITES label, allowing full traceability of the species, origin, and harvest.
At Beleaev, every tin we sell includes complete CITES documentation and verified sourcing information. If a supplier cannot provide full traceability, we simply do not work with them.
For us, transparency is non-negotiable.

The Beleaev Sourcing Philosophy
We source exclusively from accredited farms operating under CITES and national regulatory frameworks with strong oversight.
For every producer we work with, we require:
- Full CITES traceability
- Verified species and harvest documentation
- Responsible water and feed management
- Strong regulatory and welfare standards
If a producer cannot meet those standards, we do not list their caviar.
Because luxury should never come at the expense of sustainability.
