Smoked Salmon: Cold vs Hot, Sides vs Slices Explained

By Beleaev Family | Beleaev Caviar & Gourmet

Cold-smoked salmon is a cured, smoked product whose smoking process does not cook it like hot smoking. Hot-smoked salmon is typically firmer and can be served in flakes, while ready-sliced cold-smoked salmon folds neatly on bread. Use the actual label and product state when choosing how to serve either.

Current formats for the comparison

Product Format on the current listing Catalogue price
Sliced smoked salmon 200g cold-smoked farmed Atlantic salmon, ready to serve as directed £17.95
Hot-smoked salmon side Approximately 1kg Atlantic salmon side, hot smoked and listed ready to eat £47.66

Checked on 12 October 2026. The side is an approximate-weight product; its final usable portion count depends on the received weight and trimming. At a 50g serving, a true 1kg usable quantity gives twenty portions. The eight-piece comparison below uses only 80g from each salmon pack.

Side, slices or flakes?

A side works for a shared board or many portions and lets the host choose their size. Ready-sliced fish saves cutting and can be folded into bagels, tea sandwiches or blinis. Hot-smoked flakes can sit on salads or be added to cooked potatoes and pasta near service. A sliced product and a hot-smoked side are not equal formats simply because both are salmon.

Follow the exact packs for use-by and opened-storage directions. The hot-smoked page lists 0–8°C, while domestic food-safety guidance recommends a fridge at 5°C or below; keep the product correctly refrigerated and follow any stricter received-pack instruction. Do not transfer one pack's storage period to the other. NHS fish and shellfish guidance explains when smoked fish needs thorough cooking for particular guests.

Prime hot-smoked salmon fillet, vacuum-sealed, for cooking

Measured serving with caviar or roe

Make eight matched rye canapés: four carry 20g cold-smoked salmon slices and four carry 20g hot-smoked salmon flakes. Each receives 5g Wild Salmon XXL Roe, so four tasters can compare one of each style under the same conditions.

  • Yield: 8 canapés for 4 tasters
  • Smoked salmon: 20g per piece
  • Salmon roe: 5g per piece

Ingredients and pack plan

Ingredient Amount used Pack to purchase
Wild Salmon XXL Roe 40g 1 x 200g pack
Smoked Salmon, Sliced, 200g 80g 1 x 200g pack
Beleaev Hot Smoked Salmon Side, Approx. 1kg 80g 1 x approximately 1kg side
Rye crispbread 8 pieces, about 80g 1 pack
Crème fraîche 40g 1 small tub
Dill 4g 1 small bunch

This recipe uses 40g of a 200g roe pack, leaving 160g, and only part of both salmon packs. Plan the remaining products before opening them and keep every remainder under its own delivered-label directions.

Equipment

  • Digital scale and eight small plates
  • Two boards, two forks and separate bowls
  • Paper towels and a chilled serving tray
  • Non-metal roe spoon

Build the cold-smoked and hot-smoked sides

  1. Check both labels. Confirm each salmon product is in its required serving state and keep it chilled. Do not infer handling instructions from the word smoked.
  2. Make equal fish portions. Fold the sliced salmon into four 20g groups. Flake the hot-smoked side into four separate 20g groups without crushing it.
  3. Prepare one common base. Arrange eight equal crispbreads and spread exactly 5g crème fraîche on each.
  4. Keep the two sides visible. Place sliced salmon on four bases and hot-smoked salmon on the other four. Use separate utensils.
  5. Add salmon roe. Weigh 5g Wild Salmon XXL Roe onto every canapé and divide the dill evenly.
  6. Serve paired. Give each person one cold-smoked and one hot-smoked canapé in the same left-right order.

What the format can establish

The equal weights show how two salmon formats behave on the same base with the same roe allocation. They do not establish a universal flavour preference. The hot-smoked product is portioned as flakes and the sliced product as folds because those are different physical formats.

Assembly fixes

  • The crispbread softens: dry the salmon exterior where needed and assemble immediately before serving.
  • The hot-smoked salmon crumbles: lift broad flakes with two forks instead of pressing them together.
  • The sliced salmon unrolls: make a low fold with the seam facing the crème fraîche.
  • The roe falls between flakes: create a small central shelf before adding the 5g portion.

Allergens and chilled storage

Fish, milk and rye, including gluten, are present; the crispbread may also contain wheat. Rye crispbread may contain sesame or other allergens. Check all three seafood labels for complete declarations and cross-contact. Keep the products chilled as directed and serve the assembled canapés promptly. No shared opened-life is assumed for roe, sliced salmon or a hot-smoked side.

Questions before ordering

Is the bought pack the serving quantity?

No. Use the ingredient amounts in the serving plan and keep the unused product under its own label. A larger retail pack does not automatically change the number of guests or the portion on each plate.

Does an equal portion prove the best flavour?

No. Equal amounts let guests choose between the formats, but the guide does not report a blind tasting or a universal preference.

Can every opened ingredient share one storage period?

No. Read the exact product instructions and any use-by date for each ingredient. Keep ready-to-eat seafood away from raw-food equipment and serve assembled dishes promptly.
