Matsusaka beef and Kobe beef are separate Japanese designations, not alternative names for the same cattle. Both have defined eligibility and traceability rules. A famous name in a menu does not prove that a retail steak carries either certification; ask for the documentation attached to the actual product.
Matsusaka City defines the brand around Japanese Black heifers that have not calved, are registered in its individual-identification system and meet the specified fattening-area rules. The qualifying production area must be the final and longest fattening location. The animals need not have been born in Matsusaka. This is why the traceability record matters more than assuming that the city name tells the whole life history.
The Kobe Beef Marketing & Distribution Promotion Association selects Kobe beef from qualifying Tajima cattle raised and processed under its Hyogo Prefecture rules. Its published definition adds carcass grading, marbling and weight conditions. The association issues certificates for qualifying beef. “Tajima” is therefore a necessary origin in the Kobe scheme but is not, by itself, a Kobe certificate.
| Check | Why it matters |
|---|---|
| Certification or identification record | Connects the claim to the exact meat |
| Cut and raw weight | Changes serving plan and price comparison |
| Actual Japanese grade | A designation is not a substitute for the pack’s grade |
| Retailer and supply chain | Shows who is making the claim in the UK |
Neither designation guarantees that every diner will prefer its flavour. A fair tasting would use comparable cuts, thicknesses and cooking. No such tasting is claimed here, and this article does not say Beleaev currently sells either certified product.
Request the exact designation, product identification and supporting certificate or traceability route. If a seller can document only “Japanese Wagyu”, treat that as the supported description. It is more accurate than borrowing the reputation of Matsusaka or Kobe without product-specific proof.
