Thaw frozen British Wagyu steaks in the fridge, in packaging or a suitable covered container that prevents drips reaching other foods. Check the centre is fully thawed before cooking unless the product gives a specific cook-from-frozen method.
| Format | Planning check |
|---|---|
| An example 250g or 400g ribeye | Check thickness and whether the piece is individually packed |
| Two example 150g fillets | Check whether the steaks are separate or frozen together in one pack |
| A whole joint | Allow a different thawing plan; a small-steak example is not a whole-joint timetable |
| A product with conflicting chilled/frozen wording | Resolve the supplied state with the seller and delivered label before planning storage |
The FSA recommends using food within 24 hours after full defrosting. Follow a shorter product-specific instruction where given. Do not thaw raw beef on the worktop.
Keep it refrigerated and allow more time, changing the meal plan if necessary. The FSA identifies microwave defrosting directly before cooking as an alternative when appropriate; follow both the product label and appliance directions and cook immediately. Do not improvise a warm-water soak to meet a dinner schedule.
Do not assume you can refreeze thawed raw meat. Follow the pack's restriction. FSA guidance distinguishes freezing a safely cooked dish from putting thawed raw food back; those are different actions, and cooked food should only be reheated once.
Neither a vacuum-pack colour nor a normal smell establishes a safe storage history. If the pack arrives damaged or in an unexpected state, contact the seller before using it. Use the buying checklist to build thawing time into the order plan.
