The simple rule for cooking with caviar
Prepare the dish first and add caviar at the end. This keeps the eggs cold, preserves their texture and lets their flavour remain distinct from the warm ingredients underneath.
The recipes below use caviar as a finishing ingredient. Times and portions are practical kitchen guidance developed for this article, not the result of a consumer survey or search-trend study.
1. Soft scrambled eggs with caviar
Time: 10 minutes
Serves: 2
Ingredients
4 eggs
25g unsalted butter
1 tablespoon creme fraiche
20g caviar
Chives
Black pepper, optional
Method
Whisk the eggs until combined.
Melt the butter in a non-stick pan over low heat.
Add the eggs and stir slowly until soft curds form.
Remove the pan from the heat while the eggs are still glossy.
Fold in the creme fraiche, divide between two plates and add the caviar.
Finish with chopped chives.

2. Caviar and butter pasta
Time: 15 minutes
Serves: 2
Ingredients
180g tagliolini or fine spaghetti
40g unsalted butter
1 small shallot, finely chopped
30g caviar
Finely grated lemon zest
Chives
Method
Cook the pasta until al dente and reserve a small cup of cooking water.
Soften the shallot gently in half the butter.
Add the pasta, remaining butter and enough cooking water to create a light emulsion.
Remove the pan from the heat.
Divide between warm bowls and add caviar, lemon zest and chives.
Do not boil or fry the caviar in the sauce.
3. Potato crisps with creme fraiche and caviar
Time: 5 minutes
Makes: 12 bites
Ingredients
12 sturdy, lightly salted potato crisps
80ml creme fraiche
20g caviar
Fresh dill or chives
Method
Place the crisps on a serving plate shortly before serving.
Add a small spoonful of creme fraiche to each crisp.
Top with caviar and a small piece of dill or chive.
Assemble at the last moment so the crisps stay crisp.
4. Caviar devilled eggs
Time: 25 minutes
Makes: 12 halves
Ingredients
6 eggs
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
20g caviar
Chives
Method
Boil the eggs until set, cool them completely and peel.
Halve the eggs and remove the yolks.
Mash the yolks with mayonnaise and mustard.
Spoon or pipe the filling back into the whites.
Add caviar and chives immediately before serving.
5. Warm blinis with caviar
Time: 10 minutes
Makes: 12 blinis
Ingredients
12 mini blinis
80ml creme fraiche
30g caviar
Chives
Method
Warm the blinis according to their instructions.
Let them cool for one minute so they are warm rather than hot.
Add creme fraiche, caviar and chives.
6. Mini potato rosti with caviar
Time: 30 minutes
Makes: 8 small rosti
Ingredients
400g floury potatoes
25g butter or neutral oil
Salt and pepper
80ml creme fraiche
30g caviar
Method
Coarsely grate the potatoes and squeeze out as much moisture as possible.
Season lightly and shape into eight small rounds.
Cook over medium heat until crisp and golden on both sides.
Drain briefly and allow the surface heat to settle.
Add creme fraiche and caviar just before serving.
7. Caviar toast with cultured butter
Time: 8 minutes
Serves: 4 as a snack
Ingredients
4 thin slices sourdough or brioche
40g cultured unsalted butter
30g caviar
Chives, optional
Method
Toast the bread until crisp at the edges.
Let it cool slightly, then spread with butter.
Cut into small pieces and add caviar.
This is deliberately simple. The butter softens the salt and the toast provides contrast.
8. Smoked salmon and caviar cucumber bites
Time: 10 minutes
Makes: 12 bites
Ingredients
1 cucumber
100g smoked salmon
60ml creme fraiche
20g caviar
Dill
Method
Cut the cucumber into thick rounds and pat dry.
Fold a small piece of smoked salmon onto each round.
Add creme fraiche, caviar and dill.
Keep chilled until serving.
9. Caviar tartlets
Time: 10 minutes
Makes: 12 tartlets
Ingredients
12 small savoury tartlet cases
100ml creme fraiche
1 teaspoon finely chopped shallot
A little lemon zest
25g caviar
Method
Mix the creme fraiche with shallot and a small amount of lemon zest.
Fill the tartlets shortly before serving.
Add caviar at the end.
Avoid adding too much lemon juice directly to the eggs. A small amount of zest gives aroma without flooding the tartlet.
10. Oysters with caviar
Time: 15 minutes
Serves: 2
Ingredients
12 fresh oysters from a trusted supplier
20g caviar
Lemon wedges, served separately
Method
Keep the oysters chilled and shuck them safely.
Check each oyster and retain its liquor.
Arrange on crushed ice.
Add a small amount of caviar immediately before serving.
Follow current food-safety guidance for raw shellfish. People who have been advised to avoid raw seafood should not use this recipe.

Portion planning
For these recipes, 10g to 15g per person gives a visible finishing portion. A 30g tin is usually enough for two people when caviar is a main feature, or for more people when it is used across small canapes.

Put chilled caviar in the refrigerator promptly after delivery.
Keep chilled ingredients out of the refrigerator for the shortest practical time.

Do not use a product after its use-by date.
The UK Food Standards Agency advises that domestic refrigerators should be 5C or below and that consumers should follow the storage instructions on chilled food.
Do you need a mother-of-pearl spoon?
No special spoon is required for safety. Mother-of-pearl is traditional and neutral in flavour. A clean food-safe spoon is also practical. The main priorities are cleanliness, gentle handling and serving the caviar according to its storage instructions.
