The Method

2. Season tenderloins. Sear in oil and butter 60 sec each side in oven-safe pan.
3. Transfer pan to oven. Roast 12 min until internal 60C.
4. Rest on board 8 min.
5. Make sauce: sweat shallot in pan juices. Add wine, reduce. Add stock, reduce. Add cream and truffle butter. Simmer 3 min.
6. Slice tenderloin into 1cm rounds. Spoon sauce over. Shave 5g truffle per portion. Serve.
