The Ingredients

Serves 2

  • 8 fresh Scottish langoustines (around 60-80g each)
  • 30g unsalted butter
  • 1 tbsp neutral oil
  • Sea salt and black pepper

For caviar vinaigrette:

  • 3 tbsp extra virgin olive oil
  • 1 tsp white wine vinegar
  • 1 tsp lemon juice
  • 1 small shallot, very finely diced
  • 20g Royal Oscietra
  • 1 tbsp finely chopped chives

The Method

1. Halve langoustines lengthways through the head and tail.

2. Mix vinaigrette ingredients in a bowl, gently folding in caviar at the end.

3. Heat butter and oil in a wide pan over high heat.

4. Place langoustines flesh-side down. Cook 90 sec.

5. Flip. Cook 60 sec on shell side.

6. Plate flesh-side up. Spoon caviar vinaigrette over. Scatter chives. Serve immediately.

Live or freshest possible. Frozen langoustines are inferior.

Halve before cooking. Halves cook fast and beautifully.

Don't overcook. 90 seconds per side max.
