Caviar temaki hand rolls with crab and avocado

The Ingredients

Makes 8 hand rolls, serves 4

  • 240g sushi rice, cooked and seasoned
  • 4 sheets toasted nori, halved
  • 200g cooked white crab meat
  • 1 ripe avocado, sliced
  • 1 small cucumber, julienned
  • 32g Royal Oscietra
  • 1 tbsp toasted sesame seeds
  • 1 tbsp finely sliced chives
  • Soy sauce for dipping
  • Pickled ginger and wasabi

The Method

1. Prepare sushi rice: cook, season with rice vinegar, sugar, salt mix. Cool the cooked rice quickly and keep it chilled if not assembling promptly; follow food-safety guidance for cooked rice.

2. Place a halved nori sheet (rough side up) in your hand.

3. Spread 30g of seasoned rice on the left third.

4. Top with crab, avocado slices, cucumber.

5. Spoon 4g of caviar on top.

6. Sprinkle sesame seeds and chives.

7. Roll the nori into a cone shape, sealing with a grain of wet rice.

8. Eat immediately, dipped lightly in soy.

Portion and handle the rice

Four nori sheets cut in half make eight bases. Weigh 240g cooked, seasoned rice so each of the eight rolls gets 30g; 32g caviar gives 4g per roll. The crab should be fully cooked and ready to eat according to its label. Food Standards Agency guidance says cooked rice should be cooled quickly, ideally within one hour, then refrigerated if held. Do not leave cooked rice standing at room temperature while preparing the other fillings.

Tips

Build at the table. Nori softens after filling, so roll close to serving.

Cold ingredients only.

Don't overstuff. Less filling rolls cleaner.

Wet rice grain seals the cone.

Variations and Pairings

With salmon roe: Use Wild Salmon Roe for orange visual contrast.

With Beluga: 30g of Beluga XXL total.

Wine pairing: Cold sake or champagne.
