Identify the grain in bavette before cooking, then slice across it after the steak rests. Thin cross-grain slices are central to this serving method; a long strip cut along the fibres can make the same steak harder to bite.
AHDB's bavette specification describes a trimmed thin-flank preparation. Cut names and trimming can vary between suppliers, so match the actual label and product format rather than using the name alone as a complete butchery specification.
The FSA allows an intact beef steak to remain pink inside if every outside surface is thoroughly seared. That does not cover rolled, minced or altered meat, and the product label remains relevant.
Try a thinner slice across the grain before deciding that it needed more time in the pan. If the lean section is dry as well as firm, extra cooking may make that worse. A marinade or vinegar dressing does not guarantee tenderness and does not replace safe cooking.
This is a cooking method, not a universal doneness schedule. Check seasoning and vinegar labels for any relevant allergens. Use the buying checklist to confirm format and delivery, and follow FSA storage guidance for retained cooked beef.
