Foie gras on toast

Foie Gras on Toasted Brioche: A Simple Serving Guide

Serve prepared foie gras on brioche with the right temperature contrast, restrained garnish and clear product selection.

Choose ready-to-eat foie gras

Use a prepared whole foie gras or bloc for this cold-topping presentation. Rougie whole duck foie gras in a jar is one option for sliced service; a raw escalope requires a separate cooking method. Check the product label before opening, particularly if you are comparing chilled, preserved and frozen formats.

Toast the brioche gently

Slice the brioche evenly and toast until the surface is lightly coloured. Its sugar and butter can make it brown faster than plain bread, so watch it rather than leaving it under a grill unattended. Let the toast release steam before adding the foie gras; hot, soft bread will not hold the topping as neatly.

Assemble at the table or just before serving

Slice the chilled foie gras with a warmed knife wiped dry. Place it on the brioche without spreading it thinly across the whole surface. Add a small spoon of fruit preserve beside it, or offer the preserve separately. Taste before adding salt because the prepared foie gras is already seasoned.

Plan the balance

Brioche is rich and slightly sweet, so use a restrained accompaniment rather than adding several sweet garnishes. For a less rich base, choose plain baguette toast instead. Brioche commonly contains wheat, egg and milk; check the actual bread and foie gras declarations for your guests. Keep unopened and opened products under their own labelled storage conditions.

Choose a prepared product

For a ready-to-eat sliced presentation, see Rougie Whole Duck Foie Gras 180g; for a smooth bloc, see Rougie Duck Foie Gras Bloc 75g. These are named alternatives, not a claim that every parfait, mousse, torchon or ballotine has the same composition.

Read the exact product label for allergens, storage and after-opening use. For general handling, see the FSA chilling and defrosting guidance. The Beleaev foie gras guide explains the wider range of formats.
