Crafted exclusively in the Rouergue region of France, it is protected by the Appellation d'Origine Propirée (AOP) designation, ensuring adherence to traditional production methods. Made from pasteurized ewe's milk, Roquefort AOP is aged in natural limestone caves in the Combalou region, which contributes to its distinctive character.

The cheese features a creamy texture with a crumbly consistency and a marbled blue veining pattern caused by Penicillium roqueforti mold. It measures approximately 150 grams in weight and provides an intense sharpness balanced by a salty, slightly tangy flavor.
