Tuna tartare with caviar is the Japanese-influenced starter that combines two raw seafood luxuries in one bowl. Sashimi-grade tuna, light Asian dressing, generous caviar topping.

The Ingredients
Serves 4
- 400g sashimi-grade tuna fillet
- 1 small shallot, finely diced
- 2 tsp light soy sauce
- 1 tsp sesame oil
- 1 tsp lime juice
- 1 tsp finely grated ginger
- 1 small fresh red chilli, finely chopped
- 1 tbsp finely chopped chives
- 80g Royal Oscietra
- 1 tbsp sesame seeds, toasted
- 1 ripe avocado, diced
The Method
1. Dice tuna into 5-6mm cubes.
2. Mix shallot, soy, sesame oil, lime juice, ginger, chilli in a bowl.
3. Combine tuna with dressing. Refrigerate 5 minutes.
4. Plate over diced avocado in 4 chilled bowls.
5. Top each with Royal Oscietra caviar, sesame seeds, chives. Serve immediately.
Tips
Sashimi-grade only. Buy from a fishmonger who sells for raw consumption.
Don't dress too early. 5 minutes max.

Keep tuna icy cold throughout.
