  • 6 large eggs
  • 600g floury potatoes (Maris Piper), peeled and thinly sliced
  • 1 large onion, finely sliced
  • 200ml extra virgin olive oil
  • 60g Royal Oscietra
  • 100g full-fat sour cream
  • 1 tbsp finely sliced chives
  • Sea salt and black pepper

The Method

1. Heat olive oil in a 24cm non-stick pan over medium-low heat.

2. Add potatoes and onion. Cook gently 25 min, stirring occasionally, until very tender. Don't brown.

3. Drain potato-onion mixture, reserving the oil.

4. Whisk eggs in a bowl. Stir in potato mixture. Salt and pepper.

5. Wipe pan, return 2 tbsp of reserved oil. Pour egg-potato mixture in. Cook 6 min over medium heat.

6. Carefully flip onto a plate, slide back into pan. Cook 4 min more.

7. Cool 10 min. Slice into 6 wedges. Top each with sour cream and 10g caviar. Scatter chives. Serve room temperature.
