King crab clusters from the Barents Sea, hand-selected at the largest XXL grade with each cluster weighing 1.3 to 1.5kg. Cooked at sea and blast-frozen straight from the boat, so the meat arrives in the same condition it came in. The meat is sweet, lobster-like and almost buttery, with firm flesh that pulls cleanly from the shell. The work is done: thaw overnight in the fridge, crack the shell, serve cold with fresh lemon and good mayonnaise. For something warmer, steam for 4-6 minutes or grill briefly with garlic butter. One cluster feeds two generously as a starter, or one as a centrepiece.
