Sturgeon is the same fish that gives caviar, and its flesh has long been a chef's secret: firm, dense and almost steak-like, with a clean, mildly buttery flavour. Often called the steak of the sea. Each fillet is responsibly farmed in the EU, hand-trimmed boneless and skinless, around 1.6kg. The texture holds beautifully on the grill, in a hot pan or under a salt crust, and the flavour stands up to assertive partners: brown butter, capers, smoked paprika, charred lemon. Slice into steaks for the grill or roast a whole portion for a centrepiece.
