Round savoury shortcrust shells, baked with Swiss butter and ready to fill. Each is 38mm across, the canapé size, and one pack of 40 covers ten to twenty guests depending on how many bites you serve per person. The shell is shelf-stable, neutral in flavour, and built to hold both wet and set fillings without crumbling. Fill at the last minute and they keep their snap, fill an hour ahead and they soften beautifully into the topping. Caviar with crème fraîche and chive. Foie gras parfait with fig jam. Smoked salmon mousse with dill. Goat curd with beetroot. Duck rillettes with cornichon. Whipped Roquefort with walnut and honey.

Use Cases
How to fill Keep wet fillings out until the last 20 minutes. For very wet fillings, brush the inside of the shell with melted butter or a thin layer of melted dark chocolate first, this creates a moisture barrier and the shell stays crisp for longer. Mousse and parfait fillings hold well for up to an hour. Pipe with a small star nozzle for height and a clean edge. Quantities for a party One pack of 40 covers 10 guests at four canapés each, 20 guests at two each. For a drinks reception of 20 to 30 guests with a full canapé table, count two packs. Serving temperature Serve at room temperature for parfait and rillette fillings. Serve cold for caviar and seafood mousse, but bring out of the fridge five minutes before guests arrive, the butter in the shell tastes best slightly under cool.

Made in Switzerland with Swiss butter. Shelf life Long ambient shelf life when sealed. Once opened, store in an airtight tin, the shells stay crisp for two to three weeks. If the shells lose snap Return to a low oven (140°C) for 4 to 5 minutes on a baking tray, cool fully before filling.
