Wild mushroom risotto with truffle shavings

The Ingredients

Serves 4

  • 320g Carnaroli rice
  • 250g mixed wild mushrooms
  • 1 small onion, finely diced
  • 60g unsalted butter (split)
  • 100ml dry white wine
  • 1.2 litres hot mushroom stock
  • 60g Parmigiano Reggiano, grated
  • 24g fresh black truffle for shaving
  • Sea salt and white pepper

The Method

1. Brush mushrooms. Sauté in 30g butter over high heat 4 min until golden.

2. Sweat onion 6 min in clean pan.

3. Add rice. Toast 90 sec.

4. Add wine. Stir until absorbed.

5. Add stock ladle by ladle for 17 min.

6. Stir in cooked mushrooms.

7. Off heat, mantecare with cold butter and parmesan.

8. Plate. Shave 6g truffle on each portion. Serve immediately.
