The Ingredients

Serves 4

  • 200g frisée (curly endive)
  • 200g smoked bacon lardons
  • 4 fresh eggs (for poaching)
  • 1 tbsp white wine vinegar (poaching water)
  • 4 small slices toasted sourdough
  • 30g Royal Oscietra

For vinaigrette:

  • 4 tbsp extra virgin olive oil
  • 2 tbsp sherry vinegar
  • 1 tsp Dijon mustard
  • 1 small shallot, finely diced
  • Sea salt and black pepper

The Method

1. Wash and dry frisée. Tear into bowl.

2. Cook lardons in dry pan until crispy. Remove. Reserve fat.

3. Make vinaigrette by whisking ingredients with 1 tbsp lardon fat.

4. Poach 4 eggs in vinegar water 3 min.

5. Toss frisée with vinaigrette. Top with crispy lardons.
