Say hello to The Italian Grazing Board.
An Italian table to graze across, loud with flavour. Spreadable nduja, cured Coppa and Finocchiona, a shaving of bottarga, golden truffle arancini and a soft Tunworth to bring it together, with hot honey and warm flatbread. Lay it all out and let everyone reach in.
What's inside the board:
- Spreadable 'nduja salami, 500g: soft, fiery Calabrian salami you spread rather than slice. Warm it gently and it melts across flatbread.
- Bottarga, 90g: cured grey mullet roe, firm and amber. Shave it fine for a salty, savoury hit.
- Italian matured Coppa, 250g: cured pork shoulder, marbled and sweet, sliced thin so it almost melts on the tongue.
- Finocchiona fennel salami, 400g: Tuscan salami studded with fennel seed, gently aromatic with a clean, herby finish.
- Truffle arancini, 1kg: crisp risotto balls with a molten, earthy truffle centre. Bake until golden and serve warm.
- Tunworth British Camembert, 250g: soft and bloomy, rich when ripe. Bake it whole for a gooey centre, or slice it at room temperature.
- Hot honey, 720g: sweet honey with a slow chilli warmth, made to trickle over the cheese and the arancini.
- Greek flatbread, 80g x 10: soft, warm flatbreads to scoop the 'nduja and carry every slice.
Warm the flatbread and the arancini, set the cured meats and cheese at room temperature, then let people build their own. A chilled Italian white or a light red both work beautifully.
