How to choose Beluga caviar
What is Beluga caviar?
Beluga caviar comes from Huso huso, the largest sturgeon species. Its pearls are usually pale grey to platinum. Both grades have delicate sweet-cream notes, clean marine depth and a soft, silken finish. Read why Beluga is known as the king of caviar.
Beluga Reserve or Beluga XXL?
Beluga Reserve Caviar has firm 3.0-3.5 mm pearls and a balanced sweet-cream character. Beluga XXL Special Reserve is selected for 4.5-5.5 mm pearls and a longer, more silken finish.
What affects Beluga caviar price?
Beluga caviar price reflects the grade, pearl size, selection and tin size. Reserve and XXL come from the same Huso huso species, but XXL is selected for substantially larger pearls.
How to serve Beluga caviar
Serve Beluga well chilled and taste the first spoonful on its own. Warm our Beleaev blinis gently, add a small spoon of crème fraîche, and use a mother-of-pearl spoon.
Portions, storage and delivery
Allow 10-15g per person for a tasting and 30-50g for a starter. Keep the sealed tin refrigerated at 0-5°C. Once opened, return it to the fridge between servings and consume within 24 hours. Explore the full caviar collection for other pearl sizes and flavour profiles.
