Beluga XXL Special Reserve is the grandest expression of Huso huso. The rarest and largest sturgeon, and the only carnivore of its species. The XXL grade is reserved for fish at the very upper limit of their growth, where the pearls reach an extraordinary size and the colour deepens to a luminous platinum.

Each pearl is extra-large and firm, between 4.5 and 5.5 millimetres, with a luminous light pearl grey to platinum sheen. The fish is raised in certified aquaculture in Belgium and China, and grows for twenty years and beyond. The yield from each batch is very small, and selection is entirely by hand.

On the spoon, Beluga XXL opens with a commanding marine presence and a quiet iodised lift. The mid-palate brings exquisite silkiness, buttery depth and a delicate nuttiness. The finish is long and polished, with elegant marine salinity. The pearl is melting yet structured, releasing slowly and unfolding on the palate.

Within the BELEAEV collection, Beluga XXL Special Reserve is the rarest and most monumental grade. Choose it when scale matters as much as flavour, when the size of the pearl is part of the moment, and when the most discerning guest will recognise the difference at first glance.

We use an Express courier service. We dispatch Monday to Friday. Orders placed before 2pm are sent the same day for next-day delivery. Orders placed after 2pm are sent the next working day. An order placed on Friday before 2pm arrives on Saturday. Orders placed on Friday after 2pm and at the weekend are dispatched on Monday for delivery on Tuesday. For addresses in London Zones 1, 2 and 3, we offer same-day delivery by our own driver within 2 to 4 hours. Beleaev Caviar is delivered in specially refrigerated packaging with ice packs. This means that we can guarantee an unbroken cold chain throughout transit, until the moment your caviar reaches your door.
