We work with caviar not as a symbol of status, but as a product of culture. From the careful selection of farms known for the highest standards and the ageing of each batch to cold-chain delivery and service — every detail matters.
The passion for making the industry more ethical, working with caviar responsibly and doing things the right way was the reason BELEAEV was created.
Over the years, we have refined our mastery of caviar — from fresh roe to its final expression — using techniques that preserve the product’s natural structure, purity and organoleptic character.
All our caviar is CITES-certified, antibiotic-free and fully traceable. We partner exclusively with the top 5% of the world’s leading caviar farms, selected for water purity, ethical standards and sustainable, consistent production.
Each batch is assessed individually and aged to reach its optimal balance of flavour and texture. We do not rush the process — because caviar rewards patience.
We oversee the entire production process, including the delicate Malossol salting that preserves the caviar’s natural character.
Only a small selection that meets our strict criteria for freshness, flavour, colour and size is approved for release.
After packaging, the caviar matures at a controlled temperature, allowing flavour to deepen and reach its optimal balance
