The Ingredients

Serves 4

  • 4 large Portobello mushrooms
  • 60g panko breadcrumbs
  • 60g Parmigiano Reggiano, grated
  • 30g unsalted butter, melted
  • 2 tbsp olive oil
  • 1 small shallot, finely diced
  • 2 garlic cloves, finely chopped
  • 1 tbsp fresh thyme leaves
  • 12g fresh black truffle (4g in stuffing, 8g for shaving)
  • 100ml double cream
  • Sea salt and black pepper

The Method

1. Preheat oven to 200C.

2. Brush mushroom caps. Remove stems. Score gills lightly.

3. Cook shallot, garlic, thyme in olive oil 4 min.

4. Mix with panko, parmesan, melted butter, 4g grated truffle, salt, pepper.

5. Place mushrooms cap-up on baking tray. Spoon stuffing into cavities. Drizzle cream over.

6. Bake 18 min until topping golden and mushrooms tender.

7. Shave 8g fresh truffle across all 4 mushrooms (2g each). Serve.

Tips

Don't wash mushrooms.

Score gills for stuffing grip.

Fresh truffle on top.
