- 2 tbsp neutral oil
- 1 tbsp light soy sauce
- 1 tsp sesame oil
- 25g Royal Oscietra
- 1 tbsp toasted sesame seeds

- 1 lime, cut into wedges

The Method
1. Pat tuna dry. Season with salt, pepper.
2. Heat oil in heavy pan over high heat. Add tuna. Sear 30 sec per side for rare centre.
3. Lift onto cutting board. Rest 60 sec.
4. Slice into 1cm-thick pieces against the grain.
5. Plate. Drizzle with soy and sesame oil. Top with 12g caviar per portion. Scatter sesame seeds and chives. Add lime wedges. Serve immediately.
