The Ingredients

Serves 6

  • 300g foie gras (deveined raw or Rougié bloc)
  • 4 large egg yolks
  • 300ml double cream
  • 100ml whole milk
  • 30ml port
  • A pinch of fine sea salt
  • A pinch of nutmeg
  • White pepper
  • 60g caster sugar (for brûlée top)
  • Maldon flakes for top

The Method

1. Preheat oven to 130C.

2. Heat cream and milk to a simmer with port.

3. Blend foie gras with hot cream-milk mixture, egg yolks, salt, nutmeg, white pepper until smooth.

4. Strain through fine sieve.

5. Pour into 6 ramekins. Place in roasting tin.

6. Add boiling water halfway up ramekins. Bake 30 min until just set with slight wobble.

7. Cool. Refrigerate 4 hours.

8. Bring to room temp 30 min before serving.

9. Sprinkle 1 tsp sugar on each. Brûlée with blowtorch until crisp.

10. Top with Maldon flake. Serve with toasted brioche.
