The Ingredients

Serves 4

  • 600g mixed white fish (cod, halibut, monkfish), cubed
  • 1 fennel bulb, sliced
  • 1 onion, diced
  • 4 garlic cloves, sliced
  • 800g chopped tomatoes
  • 200ml dry white wine
  • 1 litre fish stock
  • A pinch of saffron
  • 1 strip orange peel
  • 4 tbsp olive oil
  • 40g Royal Oscietra
  • 4 slices toasted baguette
  • 4 tbsp aioli
  • Sea salt and black pepper

The Method

1. Heat olive oil in large pot. Sweat fennel, onion, garlic 8 min.

2. Add tomatoes, wine, stock, saffron, orange peel. Simmer 25 min.

3. Add fish cubes. Simmer 5 min until just cooked.

4. Discard orange peel. Season.

5. Ladle into warm bowls. Top each with 10g caviar.

6. Serve with toasted baguette and aioli on the side.
