Pre-baked sweet pastry cases, round, 53mm in diameter, ready to fill. The medium size sits between a one-bite canapé and a small individual tart, big enough to hold a generous filling, small enough for a tasting plate or a dessert spread. The shell is buttery, lightly sweet, and stable enough to hold custards, ganache, fruit compote and lemon curd without softening straight away. Fill ahead for desserts that benefit from setting time, fill at the last minute for fresh fruit and whipped fillings. Lemon curd with toasted meringue. Dark chocolate ganache with sea salt and raspberry. Crème pâtissière with figs, peach or strawberry. Pistachio cream with rose water. Mascarpone with poached pear and honey.

Use Cases
How to fill For ganache: pour just-warm ganache into the shells, leave to set for 30 minutes at room temperature, then top with fresh fruit, gold leaf or a curl of dark chocolate. For fruit and cream: brush the inside of each shell with a thin layer of melted white or dark chocolate, this keeps the pastry crisp under wet fruit. Fill no more than 30 minutes before serving. For pâtissière and lemon curd: pipe in cold, top with fresh fruit or torched meringue, hold in the fridge for up to two hours. Serving Let filled tartlets sit at room temperature for 10 to 15 minutes before serving, the pastry softens slightly and the filling reads at its best.
