How to Serve Japanese Wagyu: Slicing, Plates and Sides

Serve Japanese Wagyu in slices across the grain, with a simple starch, vegetables and a small optional condiment. Prepare the table before cooking so the beef does not sit waiting while you finish the sides. Portion size should reflect the whole menu, not just the size of the steak.

How do you slice Wagyu for a shared plate?

Find the direction of the muscle fibres before cooking, then cut across that direction after the steak has rested appropriately. Turn individual pieces if their grain runs differently. Use a clean board and knife reserved for cooked food.

Arrange manageable slices rather than leaving guests to divide one large piece at the table. Do not force every cut into the same slice thickness: a compact fillet, a ribeye and ready-sliced chuck have different shapes and uses. What belongs on the plate?

Start with three supporting elements: a neutral base, a vegetable and something sharp offered separately. This is a menu suggestion, not a rule about authenticity. Guests can then taste the beef before deciding how much sauce they want.

How much should you allocate to each guest?

Work from raw purchase weight, then allow for cooking loss. As an illustration, a 200g pack divided between two people gives each a 100g raw allocation. That can be a tasting course with other food; it is not a promise of two substantial mains or a dietary recommendation.

How do you keep service organised?

Have serving plates ready, but do not use table presentation as a reason to hold food indefinitely. Cook in manageable batches and serve promptly. For hot-pot or griddle meals, keep raw meat in a separate area with dedicated utensils.

  2. Put condiments and clean serving utensils on the table.
  3. Cook the selected cut using its appropriate method.
  4. Rest and slice as appropriate, then divide the planned portions.
  5. Deal with leftovers promptly rather than leaving a platter out for the evening.

What should you ask guests before choosing sides?

Check allergies and dietary needs. Soy-based sauces can contain soya and wheat; butter sauces contain milk; prepared condiments can introduce other allergens. Read the specific packaging and keep serving spoons separate. “Served on the side” does not by itself make a meal suitable for someone with an allergy.

Should every cut rest for two minutes?
