Crafted from the mullet’s roe pouch, each piece is carefully hand-massaged to remove air pockets before being gently dried and cured in sea salt. This traditional process concentrates the natural character of the roe, enhancing its flavour, firmness, and elegance.

The result is a gourmet delicacy with an intense nutty-saline profile and a smooth, silky texture. Bottarga pairs exceptionally well with neutral, understated flavours that allow its rich, savoury complexity to take centre stage.
