Kobe Beef vs Wagyu: Origin, Grades and What to Buy

Wagyu describes Japanese cattle breeds and the beef associated with them; Kobe beef is a tightly defined designation for qualifying Tajima cattle from Hyogo Prefecture. Japanese A5 Wagyu is not automatically Kobe beef, and genuine Kobe beef is not required to be A5.

That distinction matters when shopping in the UK. “Japanese”, “A5”, “Kagoshima” and “Kobe” answer different questions. A useful listing states what the product is and can support the claim, rather than using the most prestigious name as a synonym for marbling.

What makes beef eligible for the Kobe designation?

The association's definition includes Tajima cattle raised in Hyogo, specified production and processing requirements, and carcass criteria. Its published standards include a meat quality grade of 4 or higher, yield class A or B and a BMS score of at least 6, alongside other eligibility conditions. Those requirements are more specific than “very marbled Japanese beef”.

Read the association's official Kobe beef definition for the full conditions. These thresholds explain why some qualifying Kobe beef can carry a grade other than A5. They also explain why a beautifully marbled A5 steak from another region cannot become Kobe through appearance or price.

Four checks before paying for a name

  1. Match the wording to the exact pack. A retailer selling Japanese Wagyu somewhere on its website does not prove the origin of every steak it lists.
  2. Ask what evidence supports the designation. For a Kobe claim, ask for documentation connected to the product or batch and the recognised designation, not a generic photograph of a Japanese certificate.
  3. Keep grade evidence separate. An A5 description is useful, but it is not a replacement for origin or Kobe evidence. An exact BMS claim should also be supported for that product.
  4. Read the practical purchase details. Cut, raw weight, number of pieces, fresh or frozen state, delivery and storage remain important even when the provenance is excellent.

A logo, premium price or a search result snippet is not enough on its own. If the evidence is unclear, pause the purchase instead of filling the gap with a favourable assumption.

Which is the better choice for your meal?

Choose by the dish first, then decide how much the designation matters to you. Ribeye suits a small, rich steak course. Sirloin provides a different steak shape and bite. Fillet is a tender, compact cut. Thin-sliced chuck roll is prepared for quick cooking in dishes such as sukiyaki and shabu-shabu. These are practical distinctions, not a ranking that makes one cut universally best.

If you want to experience a particular certified origin, buy that origin with evidence. If your aim is to cook a Japanese A5 dinner, a clearly described non-Kobe A5 product may meet the brief. Paying for a more specific name will not fix an unsuitable cut, oversized portion or wrong cooking method.

Common Kobe and Wagyu questions

Is all A5 Wagyu Kobe beef?

No. A5 is a carcass grade. Kobe is a specific designation with origin and eligibility requirements. Neither term can substitute for the other.

Can Kobe beef be A4?

Yes, qualifying beef can meet the association's quality threshold without being A5, provided all its other Kobe requirements are met. A grade alone does not confirm eligibility.

Does Beleaev's current A5 range count as Kobe?

No such claim is made here. The products reviewed for this guide are offered under their own Japanese A5 and regional descriptions, not verified Kobe certification.
