How to Cook A4 Wagyu Ribeye: Thickness, Heat and Rest

Cook A4 Wagyu ribeye according to its thickness, storage state and product instructions, not a fixed number of seconds attached to the grade. Aim to colour the entire exterior without burning the fat, then adjust the heat to finish the steak appropriately.

What should you prepare first?

Have a heavy frying pan, tongs, a clean food thermometer, a resting plate and a slicing board ready. Prepare rice, potatoes or vegetables first. A restrained accompaniment, such as mushrooms and a little citrus, keeps the meal simple while you concentrate on cooking.

If the beef is frozen, thaw it in a container in the fridge. FSA guidance says to use food within 24 hours of full defrosting, while following the pack's storage and use-by instructions. Do not leave the steak on the worktop to thaw.

How should you cook the ribeye?

Use the following sequence as a method, adjusting it to the actual steak rather than treating it as a validated timing chart.

  1. Prepare the surface. Pat the chilled steak dry with kitchen paper. Keep raw-meat utensils separate from those used for serving.
  2. Heat the pan. Bring it to a controlled searing heat. If the surface is smoking heavily, reduce the heat before adding the meat.
  3. Colour the exterior. Lay the steak flat without crowding. Turn it to cook both faces and use tongs to expose the edges to the heat.
  4. Adjust for thickness. A thicker steak may need gentler heat to finish after the outside has coloured. A thin piece has much less margin for continued cooking.
  5. Check, rest and slice. Follow the pack's required preparation. Rest briefly on a clean plate, then slice across the grain with clean utensils.

Visible marbling does not make all A4 steaks equally fatty. If the pan needs lubrication, use a small amount of suitable cooking fat rather than assuming every cut can cook perfectly dry.

What if the pan fills with fat?

Lower the heat if the fat starts to smoke or the surface darkens too quickly. Avoid repeatedly extending the cook merely to render every visible seam: that can leave the steak overcooked. If necessary, move the pan off the heat and remove excess fat carefully into a heatproof container.

Never add water to hot fat. Keep the cooking area clear and do not transfer a very hot, full pan over people or serving plates.

Can A4 ribeye be served pink?

FSA cooking guidance allows intact whole beef cuts to remain pink inside when the entire exterior is properly cooked. This is not permission to undercook minced, rolled, injected or mechanically tenderised beef. Follow the supplier's instructions; if its preparation is uncertain, cook it thoroughly.

For thorough cooking, the FSA gives 70°C for two minutes or an equivalent such as 75°C for 30 seconds. A clean thermometer helps check that process. Grade and marbling do not change these safety distinctions.
