How Japanese Wagyu Grading Works: Yield, Quality and BMS

Japanese Wagyu grading combines two assessments: a yield letter and a quality number. Marbling contributes to quality, but it is not the whole assessment. The result describes the carcass; it is not a promise about your preferred cut or the amount of fat left in a frying pan.

First, what does the yield letter measure?

The letter concerns the expected yield of saleable cuts from a carcass. It is not an authenticity mark, a breed name or a percentage of cooked steak. The Japan Meat Grading Association's beef standard sets out the assessment and its A, B and C categories.

For a home cook, the useful distinction is between carcass yield and kitchen yield. The latter changes with trimming, cooking and serving. An A-grade letter cannot tell you exactly how much a purchased 200g steak will weigh after cooking.

Then, how is the quality number chosen?

Four areas are assessed: marbling; meat colour and brightness; firmness and texture; and fat colour and quality. The final quality grade follows the weakest component, rather than an average. MAFF's grading overview explains this combination of yield and quality.

Consider an illustrative example, not a Beleaev grading record. Suppose three components receive 5 and one receives 4. The quality result is 4. If the yield assessment is A, the combined result is A4; the three stronger components do not average it back up to A5.

Where does BMS fit?

BMS is the marbling scale used within the assessment. It adds more detail about that component, but cannot replace the remaining quality checks. Consequently, a high BMS alone does not establish the complete grade.

Nor should you turn an A5 product title into an exact BMS claim. When a seller provides a score or range for a specific product, read it as that product's stated information. Do not transfer it to every other A5 item in the same collection.

Why can't a product photograph do the grading?

A photograph shows one view under particular lighting. It does not provide the complete carcass assessment or establish the grade of every surface and cut. Use it to understand the presentation, while relying on the seller's supported product specification for grade.

The same boundary applies to origin. Japanese grading does not independently prove a Kobe designation or a named farm. Our authenticity guide covers those different questions.
