Almaz Diamond Caviar is one of the rarest treasures in fine caviar. The albino sturgeon is one of the rarest mutations in nature, a single fish among thousands carries the white pigment that produces golden, mirror-clear roe. Almaz is drawn only from these albino sturgeon, hand-graded for clarity and uniform colour.
Each pearl is small to medium and delicate, between 1.5 and 2.0 millimetres, with a luminous tender gold to golden-yellow shimmer that reflects light like mother of pearl. The species is a Huso huso and Acipenser ruthenus hybrid, the Bester Albino, raised in spring-fed pools across Germany and China.
On the spoon, Almaz opens with a clean marine note and a quiet glassy crispness. The mid-palate brings hazelnut and a soft cream-fraiche centre. The finish is long and buttery, holding for nearly a minute on the palate. The pearl gives a glassy snap, then dissolves into a slow buttery release.
